Making Food Memories: Understanding Connections Between What & Where We Eat.

I am curious to understand what makes a recipe, dish or cuisine special, triggers positive nostalgia, curiosity, or the urge to recreate a certain dish? Does it have any bearing on where we eat it? If these caviats change, how does it affect us and our memory of the same food?
