Welcome to a project to preserve traditional plant-based recipes from around the world and the stories of people who created them. Recipes using minimally-processed, healthy ingredients with few or no animal products are especially sought. Why? Because these best represent what most people ate before Westernized, fast-food. This survey takes four minutes to follow and collects one recipe. The link may be used repeatedly. There are spaces also to tell about the cooks. Here is a sample completed form: 

1.) Recipe name, your name and description:  Mary´s Akkra funfun. Wendy Lee Hermance, American non-fiction writer and former cafe owner.

3.) List of Ingredients: 
1 1/2 cups dried white beans
2 tsp salt

2 tbsp finely chopped onions
cayenne pepper to taste
oil for frying: two parts peanut oil, one part red palm, or your choice.
Heavy flat-bottomed skillet or wok for frying.

4.) Geographic region recipe is from: Africa, Sub-Saharan Africa, Benin.

5.) Recipe Steps (up to 16 lines): Soak beans overnight, cook until tender. Drain. Hand mash or blend in blender until smooth. Fold in onions and cayenne pepper. Heat the oil over a hot flame. To see if it is hot enough, dip the non-stirring end of a wooden spoon into the oil. If bubbles rise, oil is ready frying. Drop mixture by teaspoonfuls. Fry until fritters turn golden brown. Drain on a paper towel. Serve hot. Serves six.
